Chocolate Black Bean Cake

I know what you're thinking......Black Bean Cake!?? That sounds disgusting.....
But I kid you not, it tastes nothing like Black Beans! Just thick chocolately goodness. I came across this recipe when I was watching some cooking channels on youtube and I was so interested in trying this one. So I searched for it in Pinterest and found the recipe. There is NO Flour and Only 1 tsp of Sugar so it's definitely a great alternative recipe to Cake if those ingredients are some you like to try to keep clear of. The icing I use however is full of sugar haha. But you can put whatever icing you like on it. I just really love this kind. Get ready to have your minds blown! (See full list of ingredients at the bottom of the post)

Ok so here we go!

Preheat the oven to 325 F


In a Blender you will combine:
 Two 15 oz cans of Black Beans (drained and rinsed)
6 Eggs
2 TBSP of Vanilla Extract
1 Tsp of Salt
1 Tsp of Sugar or Stevia

Blend on high until smooth (few minutes)


Combine dry ingredients into separate bowl:
3/4 Cup of Cocoa Powder
2 Tsp of Baking Powder
1 Tsp of Baking Soda


Grab another bowl:
Beat 12 TBSP (1 1/2 sticks) of Butter
and
1 Cup of Honey
Beat until smooth and fluffy

Add the remaining 4 eggs one at a time
30 seconds between each addition


Pour the Bean mixture in with the Honey mixture.
Beat until fully combined.
Now add the dry ingredients and Beat until combined.


Take 2 cake pans and grease them with Butter (or coconut oil). Be generous.
I used Pam once to grease it, but it definitely did not come out
of the pan as smoothly as with the butter.
Cut two circles of Parchment Paper and put them on the bottom of the pans also.
Butter on top of that as well.
I swear I've never had cake come out of a pan so easily!

::Optional::
You can sprinkle cocoa powder onto the pan


Pour Mixture into pans let it cook for 40-45 Minutes on 325 F
or until toothpick comes out clean.


Now it's time for the Icing!
Like I said you can make whatever icing you want, I just think
this kind compliments the cake really well!

1 Cup of Butter. Beat until smooth.
3-4 cups of Powdered Sugar. Adding one at a time.
3 TBSP of Milk or Heavy Cream
1 TBSP of Vanilla Extract
1/4 Tsp of Salt
Mis until smooth.
1/2 Cup of Cocoa Powder. Mix until incorporated.
DONE!

When the Cakes are done, leave them in the Pan for 10 minutes.
Carefully take them out of the Pan and put them on a cooling rack.
Be sure to let them completely cool before putting on the icing.
If it's still warm the icing will just melt away.



Voila!!!
A Delicious, Chocolate, Thick, CAKE!
I may try some Garnish or toppings next time.
Im thinking maybe Mint, Crushed Almonds, Skors Bits, or Strawberries!

CAKE:
  • 3/4 cup unsweetened cocoa powder, plus more for dusting
  • Two 15-ounce cans black beans, drained and rinsed
  • tablespoons pure vanilla extract
  • teaspoon sea salt
  • teaspoon sugar or pure stevia extract
  • 10 large eggs
  • teaspoons aluminum-free baking powder
  • teaspoon baking soda
  • 1 1/2 sticks (12 tablespoons) unsalted butter
  • cup honey


FROSTING:
  • sticks (1 cup) unsalted butter, softened
  • to 4 cups confectioners' sugar, sifted
  • to 4 tablespoons milk or heavy cream
  • tablespoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup unsweetened cocoa powder
